EXECUTIVE CHEF

Job Description

Directly responsible for implementing and adhering to the highest culinary standards and overseeing all culinary operations.  Responsible for supervising all kitchen functions.

ESSENTIAL DUTIES & RESPONSIBILITIES:

  • Manage culinary team & day-to-day kitchen operations
  • Staff recruiting, hiring, training and development
  • Promote a positive and comfortable work environment for staff
  • Establishing individual and team goals and following through to completion
  • Oversee quality, service, technique, portion, presentation and food cost control
  • Cost control and P&L mastery
  • Utilization of back office tools (Compeat, POS, DSR, Declining budgets, organization, invoicing, BEO contracts, etc.)
  • Oversight of team training for all areas of Back of House
  • SOP adherence
  • Maintaining highest quality of service standards
  • Create new menu items and seasonal menu development and roll out in cooperation with Corporate
  • Ensure that proper cleaning and sanitation procedures are in place and are common practice
  • Budget development, forecasting and establishing financial goals
  • Ensures company safety standards are strictly followed in each unit
  • Execute flawless BEO events, catering events and service
  • Monitors production of all recipes to ensure consistent quality
  • Works in conjunction with unit managers to identify areas for opportunity and implement action plans to stimulate business growth
  • Attend weekly manager meeting
  • Conduct monthly BOH meeting
  • Promote thorough communications with all staff
  • Ensure 14 consecutive successful services every week
  • Update all meeting agendas using Meeting Matrix information flow

QUALIFICATIONS:

  • ServSafe Food Manager Certification
  • Minimum 5+years of experience as Executive Chef

Compensation
